Apart from writing for places that should visit when a tourist arrives in Macedonia, I would like to write something about the Macedonian cuisine.

Macedonian cuisine, an aspect of Balkan cuisine, is the traditional cuisine of Macedonia. It reflects Mediterranean and Middle Eastern influences and shares characteristics of other Balkan cuisines. The relatively warm climate of the country provides excellent growth conditions for a variety of vegetables, herbs, and fruits. Macedonian cuisine is also noted for the diversity and quality of its dairy products, wines, and local alcoholic beverages, such as rakija.

Tavče-gravče and mastika are considered the national dish and drink of the Republic of Macedonia, respectively.

There are also numerous specialties in Macedonian cuisine, which you can not find elsewhere. Many of the tourists after their stay in Macedonia, leave the country satisfied with all the possible specialties they have tried here.

Macedonian beans, ajvar, and moussaka, as well as several other traditional Macedonian dishes, are promoted on a foreign site for cuisine, fashion, beauty, and health.

Recipes:

STUFFED OHRID TROUT

Ohrid trout or the Lake Ohrid brown trout (Salmo letnica) is an endemic species of trout in Lake Ohrid. The Ohrid trout is a specialty in Macedonian gastronomy; it is used for soups and other dishes. You can also apply this recipe to any bigger fish.

Ingredients needed:

  • 2 rainbow trouts
  • lemon juice, butter, salt, pepper.

Filling:

  • 120 g chopped spinach,
  • 100 g unsalted cheese
  • 1 tbs flour
  • 1 egg yolk
  • sour cream
  • salt and pepper

How to prepare:

  1. Clean and dry the trouts inside. Sprinkle with salt, pepper and lemon juice inside.
  2. Prepare the filling by adding all the ingredients (frozen and defrost spinach can be used). Divide the filling and stuff the trouts with it.
  3. Spread butter on aluminum foil, then place each trout in and wrap in the foil. Place in baking pan cover with 2 cm boiling water and bake in the oven. Serve trouts decorated with parsley and lemon wedges.
  4. Serve this dish with Macedonian white wine.

Meat and Potato Gratin (Traditional Macedonian Moussaka)

Macedonian Moussaka:

(Meat and Potato Gratin)

Ingredients:

  • 1kg of potatoes
  • 500g. ground mixed meat
  • onions
  • sour cream
  • 2-3 eggs
  • a little bit Vegeta (spice of mixed dried vegetables), black pepper, salt.

Preparation:

First I peeling the potatoes and cook them. Minced meat is frying in a pan with finely chopped onions. When meat is fried, add Vegeta, black pepper, and a little salt. Cooked potatoes are cut into rolls so put a row of potatoes in the pan, then fried minced meat, again a row of potatoes then fried minced meat, and all the way to the end. It is put in the oven to bake half an hour. In the meantime, I’m mixing the cream with the eggs, a little milk to not be a thick and half a teaspoon of vinegar and pour over moussaka, and bakes for another ten minutes.

Macedonian-Style Vegetable and Meat Stew -(Turli Tava)

Ingredients:
500 gr. pork meat
1 red onion
1 onions
2 zucchini
2 carrots
2 sticks celery
200 gr. green beans
2-3 potatoes
2 tomatoes peeled
a few bamyas (gumbo)

Preparation:

Cut the vegetables into cubes.
Fry onions and red onions first. So add the carrots and celery and fry a little. Now add the meat and fry a little to soften. Add the rest of the vegetable except for bamyas and tomatoes. Add a little water to this, and let it boil down to the silent flame. Now add tomatoes and bamyas, pour a little water and leave for 15 minutes to boil. Add spices and pour into earthenware pan, cover with foil and bake for 30 min. at 200 degrees. Remove the foil and bake another 15 minutes.

Macedonian salad

For the preparation of the famous Macedonian salad, you need the following ingredients:

2 large tomatoes
2-3 peppers (fresh or baked)
2 cucumbers
1 smaller onions
white feta cheese
salt
olive oil
parsley

Preparation:

Tomatoes, cucumbers, onions, and peppers are cut into cubes and placed in a deep serving bowl. Then add salt, add oil and mix. The salad is decorated with grated cheese and parsley. There are various variations of this salad so you can experiment.

    • Thanks for your comment.Yes, these are delicious, indeed! You can order these specialties in most of the restaurants in Macedonia. But some of my recommendations are Skorpion and Kafeanata na Dace in Veles, Bakal in Brvenica (a small village near Tetovo), Vodenica 3 near Kriva Palanka and many more. Most of these places you can find on Google Maps with proper directions.

      Hi Mr. Dallas Mc Calister, thanks for your comment. I can’t say where you can find this kind of food in Tennessee, really. Probably you can’t. Here why. Ohrid trout is special sort of trout. You can’t find it in any other place in the world except in Ohrid lake.But you can try this recipe with another kind of trout or even different kind of fish or Visit my Macedonia and taste these recipes here in the right place.
